Vegetarian Recipe: Eggplant Menage

In my effort to feed the family before they go starving on me… I oftentimes will look in the fridge and see what I have that I can use EVEN when I don’t have a particular recipe in mind. That’s what happened today, I had a bunch of veggies and a small bottle of inexpensive white wine (about 6 ounces).  Here’s what I used:


2 eggplants chopped
2 zucchini chopped
1/4 red onion finely chopped
2 tomatoes chopped
1 fresh sprig of rosemary
1 small 6 oz bottle of cheap white wine
Italian seasonings
1 sprinkle of cumin
a dash of salt

In a pot, place a bit of olive oil (I use avocado oil) at medium heat, add onion and when a bit transparent, add the rest of the veggies, the wine, cover for a minute and add the rosemary, Italian seasoning and the dash of salt (to taste). Cover and cook for about 5 to 10 minutes or until the eggplant is cooked but not mushy.  Serve and add the sprinkle of cumin.  I served it with a 1/2 baked and sliced sweet potato.
