Roasted Pumpkin Seeds

I love lazy Sundays and lazy Sundays with pumpkin carving are the BEST  That’s what my 5 year old and my hubby have been doing. My hubby makes the most beautiful carved pumpkins I’ve seen. My job is to gut the pumpkins and clean the seeds, wash them, dry them and roast them. These roasted pumpkin seeds were so delicious that we ate them all. By the way, there was no need to shell them. Just eat them whole. While my hubby, my 5 year old and enjoyed our Shakeology, our pumpkin seeds were roasting in the oven. Here’s the picture and the recipe:

 

Roasted, healthy pumpkin seeds

Pumpkin seeds
2 – 3 tablespoons of melted coconut oil
1 tsp Himalayan salt

Preheat your oven at 300 degrees. Coat your pumpkin seeds with the melted coconut oil and mix with your hands. Sprinkle the Himalayan salt and mix. Place on a metal tray and roast for about 30 minutes or until brown, making sure to check them often and turning every 5 – 10 minutes so they roast evenly. Delicious, nutritious and healthy. Pumpkin seeds are a great source of magnesium which helps prevent diabetes according to recent studies.
