Roasted Lime Chicken

This roasted lime chicken has been a family favorite for years. It’s healthy, it’s not made with any butter and it’s delicious. I always giggle when I hear someone assure me that the only way to get a delicious golden roasted chicken is to coat it with butter. I have proof that this is not the case. The great thing about this recipe is that you can use this chicken to serve it over salads, or with a side of steamed veggies and brown rice. It’s soooo good and SIMPLE to make.

Ingredients:

1 whole chicken
1 lime
1 tsp salt
1/2 tsp pepper

Instructions:
Preheat oven at 375 degrees.

Cut the lime in 4, in the shape of an X but without cutting all the way through
rub chicken with salt and pepper and insert lime in the cavity of the chicken.

 

Bake at 375 degrees for about 35 minutes or until it has this beautiful golden tone. Your chicken is done, Slice, serve and enjoy!
