And so my obsession with this wonderful food has started and the possibilities it seems like, will never end! One of the girls in my group recommended this quinoa breakfast recipe and it sounded SO good, I just couldn’t wait to try it. So here it is:
Ingredients:
1 cup quinoa
2 cups water
Place in a saucepan and cook like you would rice until water is completely evaporated. It takes about 20 minutes. Don’t add salt.
For the breakfast:
1 tablespoon almond butter (you can also use natural peanut butter)
a dash of cinnamon
1/2 banana cut in slices
1 teaspoon grade B maple syrup, or raw honey or just a bit of stevia to taste (if you want, I didn’t use it though)
Once cooked, add a bit of almond or coconut milk (I used coconut) sprinkle with ground cinnamon, add 1 tablespoon raw almond butter (you can also use natural peanut butter), some banana slices and a bit more cinnamon if you’d like. That’s it! Delicious, healthy and you’ll feel full for a long time.
