Healthy Blueberry Crepes

I love breakfast, I look forward to breakfast. I’m normally super duper hungry in the mornings and will normally wake up with the idea “OH! I know what I’m going to make today, or Oh! I know what I want for breakfast today!” My hubby normally prepares breakfast for us. Well, today was one of those days… except I did not have crepes for breakfast, this morning I was craving something else. It wasn’t until my hubby went out to run an errand at around noon (we both work from home), that I suddenly came to the realization “Oh, I’m hungry and I’m craving a crepe, a blueberry crepe, and why not make some healthy blueberry crepes?” So there you have it, the birth of the very healthy blueberry crepe came about as I was sitting home alone, trying to figure out what I was going to eat. It made me wonder if there’s that part of me who wants to be selfish with yummy food sometimes. I imagine myself saying “MYYYY PRECIOUS” in a very sneaky Gollum voice, to the delicious healthy blueberry crepe as I devoured every bit of it.

So here is the recipe:

Ingredients for the crepe:
4 egg whites
1 tsp. unsweetened cocoa
1 scoop vanilla protein powder

For the filling:
1/4 cup blueberries
1 tbsp natural almond butter or peanut butter

For the dip:
2 tbsp non-fat, plain Greek Yogurt
1/4 tsp unsweetened cocoa
1/4 tsp raw honey

Preparation:
Combine vanilla protein powder, cocoa and eggs and beat or place in a Magic Bullet to combine. Pour on nonstick hot pan, cover and cook at medium high for about 2 minutes. Spread nut butter on half of the crepe, place berries and fold over continue to cook for an additional 30 seconds on each side. Serve.

Preparation for dip:
Place Yogurt on dish, sprinkle with cocoa and drizzle raw honey. Serve crepes and enjoy.
