Curried Sweet Potato Fries

I LOVE sweet potatoes and I absolutely love, love LOVE sweet potato fries. I am of the belief that we can modify any treat we want into a healthier and much more delicious treat. So I decided this week that I’d experiment a bit and created these healthy Curried Sweet Potato Fries with a delicious creamy garlic turmeric dip.

Making this recipe gave me an opportunity to use my oil mister which my hubby purchased at Costco a few months ago. It’s awesome because unlike the commercial spray oils, it’s reusable and you have complete control of what type of oil you’re putting in it, without the unnecessary preservatives and chemicals. I have shared a picture of what the mister looks like, although I’m sure that you can buy it elsewhere.

2 sweet potatoes, washed and peeled
1 tablespoon olive oil
1/2 tsp Himalayan salt
1/4 tsp turmeric
1/4 tsp cumin
1/4 tsp coriander

For the dip:

1 cup plain non fat Greek yogurt
1/2 tsp Himalayan salt
1 tbsp olive oil
1 garlic clove, crushed
1/2 tsp turmeric

Preheat the oven to 375 degrees. Slice the sweet potatoes in the shape of thick fries. Mix all your dry ingredients in a small bowl, this will make it easy for the “fries” to coat evenly. Place the sweet potatoes in a bowl and drizzle with the olive oil. Now it’s time to get your hands dirty, mix well with your hands making sure that the potatoes are evenly coated. Then drizzle all the dry ingredients on top and mix well with your hands. Place on a baking tray with aluminum foil… make sure you spray the aluminum foil with olive oil as well so the fries won’t stick. ┬áPlace in the oven and bake for 25 – 30 minutes or until fully baked and they have a golden color.

While the fries are in the oven, place your crushed garlic in the tablespoon olive oil on a pot at medium heat. Once the garlic takes a golden hue, take off the stove and set aside to cool. Meantime, take your cup of yogurt, place in a bowl and mix with the turmeric ad salt. Once the garlic and oil are cooled off, add to the yogurt and mix well.

Set the fries aside to allow them to cool a bit, serve and enjoy!
