Baked Banana Bread Oatmeal

I was looking for something comforting and delicious that we all could enjoy after a restless night. My little girl was sick last night and as usual, I was up at 5:45 am, even though I literally got about 5 hours of sleep. So what does one do when you’re unable to fall asleep that early in the morning and after a few minutes of prayer, meditation and reading? Bake! I was craving a banana nut bread without all the sugar in it. Amazing as it sounds, I’ve been extremely creative in the kitchen today even though Ive had little sleep. Good thing that what I’m cooking is healthy though, take al ook at this delicious Baked Banana Bread Oatmeal recipe that I came up with… as a side note, I used Coconut Palm Sugar which is low in calories, natural and low in the glycemic index just to give it a caramelized look. It was SO delicious!

Here is this “masterpiece”

Ingredients:
2 cups rolled oats
1/2 cup of chopped walnuts
1 banana mashed
2 bananas sliced (set aside)
1 tsp baking powder
1/4 tsp salt
1/2 cup walnuts
1 egg
1 tsp. vanilla
1 1/2 cup almond or coconut milk (We love the So Delicious brand)
1/4 cup oats blended to the consistency of flour (I will explain for what) set aside
2 to 3 tsp. of coconut palm sugar (much healthier, less calories and low in the glycemic index)

Instructions:
Preheat oven at 375 degrees. In a bowl, beat the egg, add the mashed banana, vanilla, almond (or coconut milk), walnuts and vanilla. Mix ingredients well. In a separate bowl mix the dry ingredients (except the walnuts). Add the wet ingredients to the dry ingredients. Spray an 8″ pyrex or pie mold with saffron oil or olive oil. Sprinkle some of the “oat flour” on top of the mold. This helps so it won’t stick to the mold.

After spraying your pyrex or pie mold with oil, sprinkle a bit of oat flour to prevent from sticking.

Arrange half of the banana slices in the bottom of the mold, then pour the mix on top.

Place the additional slices of banana on top.

Bake for 25 minutes. Take out from the oven, sprinkle the coconut palm sugar on top and BROIL for about 4 minutes. That will give it the caramelized look. Serves 4.
