Cauliflower Recipe: Faux Mashed Potatoes

I don’t like cauliflower and my hubby loves it. He can’t quite understand why I have such a despicable relationship with it. The truth is that I don’t like cooked cauliflower, raw is okay. What can I say? I’m a bit odd if you haven’t noticed. You’d think that I’d have the same issue with broccoli but I don’t. Although the truth is that most of the times I eat broccoli raw as well. Anyhow, in my quest to find something yummy to eat I promised myself that I would attempt to have a breakthrough in my relationships with the two vegetables that I didn’t like. I succeeded at making peace with the eggplant so of course, the cauliflower was next.

As I looked and looked for a good recipe, I found a “faux” mashed potatoes recipe made with cauliflower, so heck, I thought I’d give it a try. To my surprise, they ended up tasting just like mashed potatoes without the added starch. The cauliflower has now moved from the “dislike” list to the “love” list… now if I could ONLY have that same breakthrough with the very few people that I don’t like, I’d be golden, on that note, I should clarify that  all my readers belong to the “love” list. 🙂

So here is the recipe:

Ingredients:

1 head of cauliflower
4 garlic cloves
1/4 can of coconut milk (full fat if you can find it)
salt and pepper to taste

Preparation:

Cut the cauliflower into florets, and steam with the garlic cloves for about 10 minutes. Place in a food processor and add the coconut milk and puree until they are in the consistency of mashed potatoes. Add salt and pepper to taste. Serve and enjoy.
