Delicious baked oatmeal I made today for my family. Strawberries, bananas,, vanilla and chocolate made a delicious Napolitano Baked Oatmeal.

My daughter woke up today asking for the banana bread baked oatmeal and with this beautiful and awesome damp Saturday morning, the weather was perfect for something warm and yummy. I had strawberries, banana, vanilla and chocolate and my mind started working at creating this delicious Napolitano Baked Oatmeal, I gave it that name as suggested by my good friend Autumn. Here’s the recipe:

Ingredients:

1 1/2 cup fresh strawberries sliced
2 medium ripe bananas (1 sliced 1 mashed)
2 tsp. cinnamon (divided)
1 tsp. honey
2 tbsp. coconut palm sugar (or stevia or Truvia)
2 cups rolled oats
1 tablespoons unsweetened chocolate powder (for glazing)
2 tablespoons chia seeds (optional.. I added them because they are super delicious and good for you)
1/4 tsp salt
1 tsp. baking powder
1 egg (beaten)
1 cup almond milk or coconut milk (We like the So Delicious brand)
2 tsp vanilla

Instructions:

Preheat oven at 375 degrees. Spray a pyrex with a bit of olive oil and sprinkle with oat flour (you can blend abut 1/4 cup of dry oats to the consistency of four and use a tablespoon of that if you wish). Set aside. Place a layer of banana slices and halft the strawberry slices on the pyrex. Sprinkle with 1 tsp cinnamon and the tsp. of honey. Bake covered with aluminum foil for about 15 minutes until the bananas are soft.

Take out of the oven and set aside.

In the meantime, mix all the dry ingredients together: Oats, baking powder, chocolate powder, chia seeds, salt and tsp. cinnamon.

Mix all dry ingredients together

In a separate bowl, mix the wet ingredients, mashed banana, vanilla, coconut milk. Add to the dry ingredients and mix well. Place layer of oats to the pyrex with the strawberry bananas and spread evenly.

Spread evenly on top of layer of bananas and strawberries

Bake for about 20 minutes. When ready, take out of the oven, layer with the rest of the strawberries and sprinkle with the coconut sugar and broil for about 3 – 4 minutes.

Napolitano Baked Oatmeal

Let cool and serve warm. You can serve it with a side of Nonfat, plain Greek yogurt sprinkled with a bit of cinnamon. Delicious! Be creative with this recipe too, add almonds or walnuts to give it a bit of a crunch.

Take a look at this delicious Baked Banana Bread Oatmeal recipe that I came up with this morning... best thing is that it's also healthy :)

I was looking for something comforting and delicious that we all could enjoy after a restless night. My little girl was sick last night and as usual, I was up at 5:45 am, even though I literally got about 5 hours of sleep. So what does one do when you’re unable to fall asleep that early in the morning and after a few minutes of prayer, meditation and reading? Bake! I was craving a banana nut bread without all the sugar in it. Amazing as it sounds, I’ve been extremely creative in the kitchen today even though Ive had little sleep. Good thing that what I’m cooking is healthy though, take al ook at this delicious Baked Banana Bread Oatmeal recipe that I came up with… as a side note, I used Coconut Palm Sugar which is low in calories, natural and low in the glycemic index just to give it a caramelized look. It was SO delicious!

Here is my recipe:

Here is this “masterpiece”

Ingredients:
2 cups rolled oats
1/2 cup of chopped walnuts
1 banana mashed
2 bananas sliced (set aside)
1 tsp baking powder
1/4 tsp salt
1/2 cup walnuts
1 egg
1 tsp. vanilla
1 1/2 cup almond or coconut milk (We love the So Delicious brand)
1/4 cup oats blended to the consistency of flour (I will explain for what) set aside
2 to 3 tsp. of coconut palm sugar (much healthier, less calories and low in the glycemic index)

Instructions:
Preheat oven at 375 degrees. In a bowl, beat the egg, add the mashed banana, vanilla, almond (or coconut milk), walnuts and vanilla. Mix ingredients well. In a separate bowl mix the dry ingredients (except the walnuts). Add the wet ingredients to the dry ingredients. Spray an 8″ pyrex or pie mold with saffron oil or olive oil. Sprinkle some of the “oat flour” on top of the mold. This helps so it won’t stick to the mold.

After spraying your pyrex or pie mold with oil, sprinkle a bit of oat flour to prevent from sticking.

Arrange half of the banana slices in the bottom of the mold, then pour the mix on top.

Place the additional slices of banana on top.

Bake for 25 minutes. Take out from the oven, sprinkle the coconut palm sugar on top and BROIL for about 4 minutes. That will give it the caramelized look. Serves 4.
